Peanut Butter Cookie (Classic and Optional PB Chocolate Chip)
Whether you like a classic Peanut Butter Cookie with the hash marks on top or a Peanut Butter Blossom Cookie or a Peanut Butter Chocolate Chip Cookie this classic recipe which I have used since I was old enough to be in the kitchen is my go-to for Peanut Butter Cookies. Does anyone remember the red Betty Crocker hard cover, spiral bound books? That is where this recipe comes from and that page in my book has shown the years of wear, and it is the only reason I still have that cookbook still around, that and nostalgia. Plus Betty kept it simple!!
Peanut Butter Cookie (Classic and Optional PB Chocolate Chip)

Ingredients
Ingredients:
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup peanut butter
1/4 cup shortening
1/4 cup butter, softened
1 egg
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
Optional:
Peanut Butter Chocolate Chip Cookies
1 cup semi-sweet Chocolate Chips
Preparation
Mix sugars, peanut butter, shortening, butter and egg in large bowl. Stir in remaining ingredients. Cover and refrigerate about 2 hours or until firm.
Heat oven to 375°F.
Shape dough into 1 1/4-inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with fork dipped into sugar.
Bake 9 to 10 minutes or until light golden brown. Cool 5 minutes; remove from cookie sheet. Cool on wire rack.
Optional Peanut Butter Chocolate Chip Cookies:
Add Chocolate Chips prior to chilling dough
Do not flatten
Bake 10-12 minutes
Notes:
I like to make a double batch of these at a time. I roll into balls and freeze. They last for up to 3 months in the freezer. When you need a quick after school treat or get unexpected company, thaw a few out and you have fresh baked cookies in no time. I freeze in balls rather than criss cross pattern so I have the option of making Peanut Butter Blossoms.
