Lemon Cream Cheese Danish

Looking for something to make quickly and have everyone think you spent hours making them. This recipe uses a puff pastry and lemon curd.

In a big hurry and you don't have a puff pastry on hand. Substitute refrigerated crescent rolls for the puff pastry. See notes below for optional direction.

Lemon Cream Cheese Danish

Danish

  • 1 sheet frozen puff pastry thawed (See Notes for Optional Crescent Roll Instructions)

  • 1 large egg + 2 tsp water or milk (for egg wash)

  • 1/3 cup cream cheese spread (from 8-oz container)

  • 3 tablespoons powdered sugar

  • 8 teaspoons lemon curd

Glaze - Optional

  • 1/2cup powdered sugar

  • 2to 3 teaspoons milk

Preparation


Heat oven to 375°F and line large baking sheet with parchment paper


  • Unfold the thawed puff pastry and lay it flat onto a floured surface or sheet of parchment paper. Roll it out just until the seams are blended, rolling a couple times both length and width-wise.

  • Slice the puff pastry in half right down the middle lengthwise using a pizza cutter. Slice each half into 3 rectangles width-wise, along the blended seams, to make 6 Danish. 

  • Transfer the sheets onto a baking tray and make sure they’re evenly spaced apart. Use a knife to score a 1/4 inch border around the outside. This allows the edges to rise in order to contain the filling. Don’t cut all the way through, but just enough to leave behind a clear border.




  • Lightly brush the edges with an egg wash. Whisk together the egg with 2 teaspoons of milk or water and use a pastry brush to apply. This helps the edges turn golden brown and glossy once baked.

  • In small bowl, mix cream cheese spread and 3 tablespoons powdered sugar.

  • Spoon about 2 teaspoons cream cheese mixture on center of each dough round; spread slightly. Top each with 1 teaspoon lemon curd.

  • Bake 12 to 15 minutes or until golden brown. Cool 5 minutes on cookie sheet; remove to serving plate.

  • In small bowl, mix 1/2 cup powdered sugar with enough milk for desired drizzling consistency. Drizzle glaze over Danish.


Serve warm.


Notes:

Optional Directions for Crescent Rolls :

Remove dough from can; do not unroll. Using serrated knife, cut dough into 8 slices. Place 2 inches apart on cookie sheet. Press each slice into 3-inch round, leaving ridge around outer edge.




Optional Berry Filling :

Mix the following and replace Lemon Curd

1/4 cup Berry Fruit Spread

1/2 cup fresh strawberries

1/2 cup fresh raspberries

(Any 1 cup of red berry combination will work)

2 tsp cornstarch or tapioca flour
