Double Chocolate Chip Sourdough Muffins

These incredibly rich sourdough chocolate muffins are loaded with chocolate chips and a rich decadent chocolate flavor. The addition of sour cream makes for a dense, ultra-most and soft muffin. These will be a favorite of young and old alike.

Double Chocolate Chip Sourdough Muffins

Ingredients

Ingredients:

2 cups all purpose flour

½ cup cocoa powder (I prefer Ghirardelli Unsweetened Dutch Process Cocoa)

2 teaspoons baking powder

½ teaspoon baking soda

1 teaspoon salt

½ cup (125 g) sourdough starter discard (Best to measure starter by weight if possible)

½ cup vegetable oil

1 cup granulated sugar

2 large eggs - slightly beaten

¾ cup sour cream

2 teaspoons vanilla extract

¼ cup whole or 2% milk

1-1/2 cups mini semi-sweet chocolate chips


Optional: 1/2 cup walnuts or pecans




Preparation

  • Preheat the oven to 425°F and place the oven rack in the center position. Line a muffin tin with paper liners or spray non-stick muffin tin lightly with vegetable oil spray.

  • In a large mixing bowl sift together flour, cocoa powder, baking soda, baking powder and salt. Set the bowl aside.

  • In a separate bowl whisk oil, sugar, eggs, sour cream, milk, and sourdough starter discard. Whisk until the ingredients come together and are smooth.

  • Pour the wet ingredients into the bowl with the dry ingredients and mix the batter until it just comes together. Do not over mix the batter. Add the chocolate chips (and optional nuts) and stir until they are evenly distributed in the batter.

  • Fill muffin tins or muffin liners to top of the muffin tin. Optional: Sprinkle a few chips on top.

  • Bake at 425°F for 5 minutes then reduce oven temperature to350°F and continue baking for an additional 15 minutes. Do not overbake. When a toothpick inserted into the center should come out clean when they are done.

  • Remove the muffins from the oven and allow them to cool before removing from muffin tin.

Notes:

To make this recipe a little healthier substitute the milk with skim milk or unsweetened almond milk. You can also replace the sour cream with a full fat plain greek yogurt.
