Dandelion Honey
Dandelion Honey is a great substitute for regular honey with a surprisingly similar taste. It has a thinner consistency than regular honey but the same sweet flavor. To make sure you get the delicate sweetness you are looking for in honey, only use the dandelion flower petals. No greens should be included. This honey is perfect on waffles, toast, biscuits or mixed into your favorite tea.

Ingredients:
· 4 cups dandelion petals (no greens!)
· 1 T lemon rind
· 4 cups distilled water
· 2 lemon slices
· 1/2 vanilla bean, split in half
· 2 1/2 cups granulated sugar
Preparation
Gather the ingredients.
1. Soak petals in cold water for five minutes to allow time for any insects to exit, then drain.
2. Place petals in a heavy saucepan along with water, lemon rind, lemon slices, and vanilla bean.
3. Bring to a boil over high heat, then reduce heat, and simmer for 30 minutes.
4. Remove pan from heat and let steep for 6 hours.
5. Strain dandelion tea through a cheesecloth and discard solids.
6. Place dandelion tea in a heavy saucepan and bring to a low boil.
7. Gradually add sugar to boiling liquid while stirring until sugar is dissolved.
