Corn Beef Hash

Ingredients:
2 to 3 tablespoons unsalted butter
1/2 c onion, finely chopped
20 oz Simply Potatoes Southwest Hashbrowns or Shredded Hashbrowns
2 to 3 cups coarsely chopped, cooked corned beef
Salt and freshly ground black pepper
Chopped fresh parsley - optional garnish
Preparation
Sauté onions in butter in a large skillet (preferably cast iron) on medium heat until translucent.
Add potatoes and cook until potatoes begin to get crispy on edges.
Add cooked corn beef and heat through. Approx 5 - 7 minutes.
Serve warm
