Caramelized Onion and Mushroom Sandwich

This sandwich takes Grilled Cheese to a whole new level. Melted Gouda, Caramelized Onions and Roasted Mushrooms - a match made in heaven. This isn't a sandwich, it's a meal. Pair it with a bowl of warm basil tomato soup for a meal that will warm you on the coldest of days.

Caramelized Onion and Mushroom Sandwich

Ingredients:

8 ounces Bella mushrooms, sliced in thick chunks

1 medium Vidalia onion, sliced thin

2 tablespoons olive oil

salt and pepper

4 tablespoons butter

4 slices bread

1 cup gouda, shredded

Pinch of sugar - optional to caramelize the onions

Preparation

Preheat oven to 400-degrees F.

On a baking sheet toss sliced mushrooms and onion in olive oil. Sprinkle with salt and pepper. Bake in oven for about 20 minutes, or until roasted to preference.

Optional: Caramelize the onions and mushrooms. Drizzle a little olive oil or butter in skillet. Add roasted vegetables. Sprinkle just a pinch of sugar and a teaspoon of water. Heat for a few minutes to let the onions caramelize. Remove from skillet, back to baking sheet.

In a skillet stove top, melt 4 tablespoons butter over medium heat.

While butter is melting, assemble sandwiches. On one slice of bread, layer shredded gouda, the roasted mushrooms and onions, then more gouda. (Layering this way ensures that the melty cheese will hold the sandwich together.) Salt and pepper to taste. Top with the other slice of bread. Lightly press together.

Place one sandwich down for one second, then gently flip it over to the other side. Repeat with other sandwich.

Cook for about 2 minutes, until lightly browned, then gently flip sandwich on other side, and cook for an additional 2-3 minutes, or until cheese is melted and sandwich is browned to preference.

To help cheese melt more thoroughly place a lid on the pan for the first two minutes.

Notes:

Roasting the mushrooms and onions adds so much flavor and is key to the depth of flavor in this sandwich.

The mushrooms and onions can be roasted ahead of time and stored, covered in a refrigerator until ready to assemble sandwich. Just reheat them in the microwave for about 15-20 seconds or toss into a hot skillet for a few minutes.

Baby Bella mushrooms are my favorite for their heartiness, but any mushroom will work just fine.

A sweet Vidalia is the best onion to use, if they are out of season or you don't have one on hand any sweet onion will work.

Same with the cheese. Gouda is great, but a soft cheese such as Gruyere or Jarlsberg could be subsituted.
