Baked Walleye
There are few other fish that compare to a walleye when it comes to flavor. They are tender and flaky with a mild, not fishy flavor. There are many ways to prepare a walleye but I prefer to not cover the taste with a lot of ingredients. This easy recipe uses ingredients you probably already have in your pantry.

3 lbs Walleye fillets
4 Tbsp Butter — 4-5 tbsp., melted
Salt and pepper to taste
Dash of Smoked Paprika
1 small onion - sliced thin
1 Garlic clove minced
Juice of one Lemon (or Substitue 1 tbsp. Lemon Juice)
1 Tbsp White Wine
1 Tbsp olive oil
Preparation
Make sure the walleye fillets are clean, deboned, and skinned.
Line a cookie sheet with aluminum foil that has been crinkled and straighted. Do not smooth all the wrinkles out. This helps prevent the fish from sitting in butter while baking and bakes them more uniformily.
Spread the olive oil onto the aluminum foil.
Preheat the oven to 350 degrees F.
In a bowl, mix melted butter, lemon juice, wine salt, pepper and paprika.
Dip the fish filets into the mixture. Reserve remaining mixture for later.
Place the seasoned fish onto the lined baking sheet in a single layer.
Scatter the thinly sliced onions and minced garlic on top.
Bake for 15 minutes. Pour remaining liquid mixture over the top of the fish
Return to oven and bake for 15 minutes.
Baking time can vary based on thickness of fillets. When fish become flaky to the touch of a fork they are done. Do not over bake.
Garnish with parsley
Notes:
If possible it is best to use walleye that are fresh and never frozen.
