Avocado Shrimp Salad
This tasty high protein, low carb salad is perfect for the seafood lover in your life. The dressing has a zesty flavor with the lime and cumin, but isn't over-powering. A perfect meal for an evening out on the patio!

Ingredients
Ingredients:
1 lb prepared shrimp - grilled or grilled in pan
Or use leftover Grilled Shrimp
8 cups of greens (Spring Mix, Spinach and Arugula)
1 avocado, sliced
1 shallot, minced
1/2 cup sliced toasted almonds
Dressing
3 tablespoons extra-virgin olive oil
3 tablespoons lime juice
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon fresh cracked pepper
Preparation
Prepare your Shrimp on stovetop or grill.
Prepare dressing by mixing all ingredients with whisk or hand blender.
Add greens to a large bowl.
Drizzle dressing over the greens and toss.
Add the shrimp. Toss shrimp with lettuce and dressing.
Add avocados, shallots and almonds.
Season with salt and pepper.
