Questions I am frequently asked about getting a Starter established:
How much flour will I need to get started?
You will need about 2 pounds of Gluten Free Flour to get you started. You won't use all of it while getting it started, but it's better to have on hand. You will use it later to continue feeding once the starter is active.
What kind of flour do you use to get a Starter going?
Mine was done years ago and I learned quickly after an initial fail, I had the best results with 50% fine ground brown rice flour and 50% sorghum flour. After it was an established starter I switched it up to also using white rice flour in my blend.
How long does it take to get a Gluten Free Starter active enough to bake with it?
There is no exact timeline. My starter took a little over two weeks before I felt it was active enough to use. Or I should clarify, my second attempt at a Gluten Free Starter took a little over two weeks. My first attempt was "a learning experience"! Gluten Free Starter is definitely more challenging, but then what isn't more challenging about Gluten Free?!
Why isn't my starter isn't all gooey (technical term there!) and bubbling over the top of my jar?
Gluten Free Starter is lacking the one thing that gives a regular starter that amazing smell and gooey, bubbly appearance. Gluten! A gluten free starter has a yeasty smell, but not quite as alluring as a regular starter. Also, it has more of a spongey appearance. If it has the tiny bubbles, and peaks as it should, you have done everything right.
My starter is discolored, is it mold?
I am not a scientist and also can't see your starter. I always error on the side of caution so I will always reply "If it doesn't look right and has spots of color, toss it and start over!!" A little flour and water is not worth the risk of getting yourself or someone else sick. Make sure you are keeping your jar clean. I thoroughly wash my jars weekly and make sure to scrape down the side with each feeding. I also don't use cloth covers just for this reason, I keep a lid on it.
